Ingredients:
- 100 g flour
- 50 g ground hazelnuts
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/8 tsp salt
- 1 egg (heres a vegan option)
- 75 g sugar (or substitute)
- 1 tsp vanilla essence
- 40 ml oil (e.g., sunflower oil)
- 125 g plain yogurt or buttermilk (soy yogurt is great too)
- Optional: 50 g chocolate chips or chopped hazelnuts (any nuts work as well)

Instructions:
- Preparation:
- Preheat the oven to 180°C (160°C fan).
- Line a muffin tin with paper liners.
2. Prepare the Batter:
- In a large bowl, mix flour, ground hazelnuts, baking powder, baking soda, and salt.
- In a separate bowl, beat the egg, sugar, and vanilla until frothy.
- Add the oil and yogurt to the egg-sugar mixture and mix well.
- Add the dry ingredients to the wet mixture and stir just until combined (do not overmix to keep the muffins light and fluffy).
- Optional: Gently fold in the chocolate chips and/or chopped hazelnuts.
3. Bake the Muffins:
- Divide the batter evenly among the muffin cups.
- Bake in the preheated oven for about 20 minutes until the top is a little golden and a toothpick inserted into the center comes out clean.

TIP: i recommend to top them of with a sprinkle of cinnamon to enhance a little of the sweetness of the muffins.
