Ingredients:

  • 100 g flour
  • 50 g ground hazelnuts
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/8 tsp salt
  • 1 egg (heres a vegan option)
  • 75 g sugar (or substitute)
  • 1 tsp vanilla essence
  • 40 ml oil (e.g., sunflower oil)
  • 125 g plain yogurt or buttermilk (soy yogurt is great too)
  • Optional: 50 g chocolate chips or chopped hazelnuts (any nuts work as well)

Instructions:

  1. Preparation:
    • Preheat the oven to 180°C (160°C fan).
    • Line a muffin tin with paper liners.

    2. Prepare the Batter:

      • In a large bowl, mix flour, ground hazelnuts, baking powder, baking soda, and salt.
      • In a separate bowl, beat the egg, sugar, and vanilla until frothy.
      • Add the oil and yogurt to the egg-sugar mixture and mix well.
      • Add the dry ingredients to the wet mixture and stir just until combined (do not overmix to keep the muffins light and fluffy).
      • Optional: Gently fold in the chocolate chips and/or chopped hazelnuts.

      3. Bake the Muffins:

        • Divide the batter evenly among the muffin cups.
        • Bake in the preheated oven for about 20 minutes until the top is a little golden and a toothpick inserted into the center comes out clean.
        • Remove from the oven and let cool completely on a wire rack.

        TIP: i recommend to top them of with a sprinkle of cinnamon to enhance a little of the sweetness of the muffins.
