- 1 egg
- 100 g sugar (or sugar substitute)
- 1 tsp vanilla essence
- 80 ml milk (dairy or plant based)
- 100 g peanut butter (creamy or chunky)
- 50 ml oil (e.g., sunflower oil)
- 80 g fresh or frozen raspberries (jam also works)
- 20g chopped peanuts (for the crunch)
Instructions:
- Preparation:
- Preheat the oven to 180°C (160°C fan).
- Line a 12-muffin tray with paper liners or grease well.
2. Prepare the batter:
- In a large bowl, mix flour, baking powder, and salt.
- In a separate bowl, beat the egg, sugar, and vanilla essence until frothy.
- Add milk, peanut butter, and oil to the egg mixture and mix until smooth.
- Combine the wet and dry ingredients, stirring just until blended (do not overmix to keep the muffins fluffy).
- Tip: If the texture of the dough is too thick, add some splashes of milk to make it more runny.
- Optional: Fold in the raspberries & chopped peanuts gently.
3. Bake the muffins:
- Divide the batter evenly among the muffin cups.
- Bake in the preheated oven for about 20-25 minutes until golden brown and a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool completely on a wire rack.
